Our Rice Koji is crafted using Premium Jasmine (Hom Mali) rice from Paddi, a company dedicated to sourcing high-quality grains and empowering smallholder farmers. Grown for centuries in the mountain highlands of Thailand, this wonderfully aromatic rice is routinely ranked the world's best-tasting rice. Paddi reinvests 20% of profits to empower farmers to fight rice waste, contributing to sustainable agriculture and reducing environmental impact.
To ensure exceptional fermentation quality, we inoculate the steamed rice with Aspergillus oryzae from Higuchi Matsunosuke Shoten Co., a revered Koji starter manufacturer in Osaka, Japan, with a legacy dating back to 1855. Their expertise in traditional Koji cultivation ensures superior enzyme activity and consistency.
